Ingredients
  • 2 cups Rolled Oats
  • 1 cup Chopped Nuts
  • 1 cup Coconut
  • ¾ cup sunflower and/or pumpkin seeds
  • ½ cup honey
  • ½ tsp salt (preferably Celtic salt)
  • 250gms mixed dried fruit - sultanas, apricots, dates, raisins, cranberries, tart cherries, blueberries etc...
  • 1 tsp vanilla essence
  • 180 gms coconut oil
Instructions
  1. Put the oats, nuts, seeds and coconut fibre on to an oven tray and toast til lightly golden.
  2. Melt the honey and add the salt to it.
  3. Measure the fruit and add to the toasted mixture.
  4. Stir until well combined.
  5. Add the honey and vanilla essence.
  6. Melt the coconut oil and add to the fruit/nut mixture.
  7. Stir until well combined.
  8. Allow to cool a little.
  9. Grease a shallow pan and line with baking paper.
  10. Tip the mixture into the pan and press down using your fingers.
  11. Place another sheet of paper on top and press down firmly.
  12. Cool and cut into squares. YUMMY SCRUMMY!
Notes
This is a very calorie-dense bar. Cut it into small pieces and nibble as a snack, limiting the servings to one per day unless you are doing an activity like tramping or a long bike ride.
